Virginia College offers career-oriented online programs at the undergraduate and graduate levels in a range of programs, including business, criminal justice, paralegal, healthcare, technology, and culinary arts. Students can complete their class work at any time; they only need an Internet connection. The college provides career placement services to all online students and financial assistance to eligible students.

VC offers a culinary immersion program at an accelerated pace. Students can complete the program in 36 weeks. This program is located in Birmingham, Alabama, and Jacksonville, Florida. World-class chefs, state-of-the-art kitchens, small student-teacher ratios, and flexible scheduling are all part of this culinary school. The dean of the school is chef Antony Osborne who has prepared banquets or specialty desserts for the Royal Family of Thailand, Prince Charles, and former U.S. President George Bush.
